Matcha Basil Chia Parfait With Blackberry Mash

This parfait is super pretty, easy to put together, and it’s absolutely delicious. If you don’t have basil on hand, feel free to replace it by fresh mint leaves, or just omit it altogether.

INGREDIENTS

For The Chia Layer

  • 3 tbsp chia seeds
  • 1/2 cup plant-based milk
  • 1/4 tsp pure vanilla extract
  • 1/4 tsp salt
  • Pinch of sea salt

For The Blackberry Mash Layer

  • 1/2 cup blackberries
  • A squeeze of lime juice

For The Matcha Layer

  • 1 frozen banana
  • A large handful of spinach
  • 1/2 cup plant-based milk
  • 1 tsp matcha powder
  • ½ tsp pure vanilla extract
  • 7-8 fresh basil leaves

INSTRUCTIONS

  1. In a small bowl, combine chia seeds and almond milk and stir well. Set aside in the fridge to set for at least 15 minutes.
  2. In the meantime, prepare the blackberry mash. Place blackberries and lime juice in a small saucepan, and cook for 6-7 minutes, or until blackberries are softened and start to release their juices. Set aside to cool. Mash lightly with a fork, keeping some larger chunks for texture.
  3. Prepare the matcha smoothie layer. Place all the ingredients in a high-speed blender and blend until smooth.
  4. Remove the chia pudding from the fridge and stir with a fork. To assemble, place a spoonful of mashed blackberries in two jars. Top with a layer of chia pudding, and finish with a layer of matcha smoothie. Garnish with your favorite granola, and enjoy!
